Paella means the “frying pan” in the regional language of Valencia, the third-largest city of Spain. Paella-de-la-Veracruz is the Spanish dish of arborio rice tinted with saffron threads that are served with chicken or sausages Paella (some people made it with rabbit or duck meat), and seasonal vegetables, shrimps, and optionally snails.

Ingredients
- Grill:
- 2 Tbsp Olive oil
- 1 Onion (finely chopped)
- 2 Garlic cloves (finely chopped)
- 1 Green, red, or yellow pepper, (julienne slices)
- 4 Chicken leg pieces (you can pick your favorite pieces)
- 1 Tomato
- 8 Calamari or 1/2 lb. Octopus (diced)
- 1 Cup of rice, pre-cooked (basmati preferred)
- A pinch or 0.125 g Saffron threads (crushed or powdered, soaked in warm water for an hour)
- 8 Clams
- 8 Mussels
- 8 Shrimps (unpeeled with head on to have a juicy taste)
- ½ lb. Seasonal vegetables (sliced: asparagus, carrots, zucchini, green beans, broccoli, etc.)
- Salt to taste
INSTRUCTIONS:
- Grill:
- Add the oil in the pan and sauté the garlic on medium heat for a minute.
- Now add the onion and sauté for 5 minutes.
- Add half of the sliced pepper, chicken, and tomato. Cook it for 10 – 15 minutes while stirring occasionally until you see the chicken turning golden brown and releasing its juices.
- Add the calamari and cook it on low heat.
- Add 2 cups of water with soaked saffron.
- Add the salt and increase the flame to high heat to bring to the boil.
- Add the rice cook for 15 minutes on medium heat.
- When the rice begins to dry, add the mussels and clams.
- Cook paella for 5 minutes then starts adding and decorating the vegetables and cover this saffron paella mix with shrimps.
- Cover the paella pan with foil, turn off the stove, and leave it for 5 minutes.
- Your paella is ready to serve.
TIPS:
- Never use smoked paprika or even simple paprika in your paella recipe as the saffron rice for paella is cooked specially for the adding the rich flavor of saffron in paella that will be gone if paprika is added in it.
- People get confused and want to know how much saffron to use in paella. The real saffron has a very intense taste that is obtained by using just a pinch of it. This little amount is enough to add a good flavor and an amazing smell in your paella.
