Cookies are everyone’s favorite snack; it is very difficult to control your hand over them. Bringing for you a recipe that tantalise your tastebuds with healthy benefits. The Persian saffron cookies recipe is based on an old Persian formula that is used by old grannies in many families.
Saffron has a list of health benefits that makes it a special ingredient in saffron cardamom cookies that are made without gluten for improved health, weight loss, and increased energy. Gluten free grains are healthier as compared to gluten containing grains that absorb all the nutrients from food.
Remember to use high quality saffron for better color, flavor, and aroma. The goodness of these cookies is enhanced after a day of baking. You can enjoy them as an evening snack with coffee or tea.

Ingredients
- ½ cup Honey
- ¾ cup Almond meal powder
- ¼ Tsp Cardamom powder
- 3 Tsp Rose petals powder
- ¼ Tsp Saffron threads (crushed)
- 1 Lemon zest
- 2 Tsp Lemon juice
- 4 Egg whites
- 1/8 Sea salt
- 8 – 10 Almonds (chopped or sliced)
- 8 – 10 Pistachios (chopped or sliced)
INSTRUCTIONS:
- Baking:
- Add the egg whites and lemon juice in a mixture and whip until stiff.
- Add all the dry ingredients along with the almond flour into the egg whites and mix in the electric mixer. The batter will be like a sticky dough at this moment.
- Add the lemon zest and honey into the flour mixture and keep folding it until completely combined.
- Place parchment paper or butter paper in a baking tray.
- Pick your favorite nozzle and fill your piping bags with the batter and make your own sizes and shapes in the tray.
- Decorate the cookies with almond and pistachios.
- Preheat the oven to 300 degrees and bake your cookies for 15 – 20 minutes.
- Let the cookies out of the oven, put them on some other tray or wire racks to cool at room temperature, and keep them in an airtight container.
- Enjoy your healthy evening snack.
TIPS:
- Your cookies remain flat or even burn while baking because of the wrong temperature. Make sure to set it on the right degrees according to your oven’s temperature. You can buy an oven thermometer to measure the right temperature.
- Weighing the almond flour properly is very important. Do not make a bridge in the cup, just the exact amount for the best results.
