Ice creams are for every season, you can’t say no to ice cream. I mean who does that!! We always have an extra corner for it. The ice cream recipe I am sharing here is Saffron cardamom ice cream. A warm yellow colored fluffy, creamy, and rich in flavor that you will love for sure. The cardamom is an extra addition that goes well with this ice cream.
Saffron is the amazing spice you need to add to your daily meals, sweets, and savories. A hay-like color, distinctive earthy smell, and an appealing taste make every dish special.
Today, the companies are having different flavors and something like saffron cardamom ice cream seems an out of age thing but believe it or not, it will be an amazing experience. And maybe it will become your perfect after meal dish-on-demand to serve to your guests every time. So, let’s go make it.

Ingredients
- 1 cup Whole Milk
- 1 cup Heavy Cream
- ¼ tsp Saffron Threads
- 4 whole Egg Yolks
- ¼ tsp + 2 tbsp Granulated Sugar
- 1 tsp Ground Cardamom
- ½ cup Shelled Pistachio (crushed)
INSTRUCTIONS:
- Add milk, cream, and saffron in a small saucepan.
- Bring it to a boil then remove it from the heat.
- Cover it and let it sit for an hour or you can leave it in the fridge overnight.
- Whisk the egg yolks and sugar in a small bowl to make it well combined. Bring the milk mixture to boil again.
- Add the mixture into eggs gradually while whisking with the other hand constantly.
- Now put this mixture in a medium pan and cook it again, this time, on low heat. Stir the mixture continuously with a wooden spoon until the mixture leaves a thin coating on the spoon and the temperature reaches 170 degrees Fahrenheit.
- Remove and strain the mixture through a sieve into a wide heatproof bowl. Add ground cardamom and cool the mixture completely.
- Freeze it in an ice-cream maker by following the directions of the manufacturers.
- When the ice cream is about to churn, add the pistachios.
- Store the ice cream in a container, cover it with plastic wrap, and freeze it for 5 – 6 hours before serving. Enjoy!
TIPS:
- Use solid sweetener in your ice cream as a liquid sweetener like honey will increase the iciness with its liquid content.
- Do not fill your ice cream maker more than 1/2 to 2/3. Too much filling will not get chilled completely.
- Add more creamy ingredients to your recipe for a fluffy experience.
