Creamy saffron yogurt recipe also called shrikhand, is one of the many healthy yogurt recipes that you can add into your breakfast to start your day with full energy and taste. You can also add this creamy yogurt in your dessert as most Indians do on the west coast. This healthy and yummy dessert is a blend of yogurt, saffron, milk, cardamom, sugar, and your favorite toppings!

Ingredients
- Grill:
- 1/3 cup Extra virgin olive oil
- 2 Garlic cloves (finely minced)
- 20 Raw Shrimps (jumbo size, peeled)
- 2 pinches Saffron strands
- 2 Tbsp Fresh lime juice
- Sauté:
- 700 g Greek Yogurt
- 1 Tsp Ground cardamom
- 8 – 10 Saffron threads
- 100 g Golden caster sugar
- 1 Tsp Milk
INSTRUCTIONS:
- Set a large sieve over a bowl and place a kitchen paper in the sieve. Pour the yogurt and cover it with another kitchen paper. Set it aside at room temperature for about half an hour to remove the moisture from yogurt.
- Pour the milk in the small saucepan on medium heat (or you can place the milk in the microwave) and add the saffron strands in it. Stir occasionally until the milk gets boiled.
- Cover the shrimps and keep it in the refrigerator for at least two hours.
- Keep the milk in the refrigerator to cool down (you can keep it in the refrigerator overnight if serving yogurt the next day.)
- After 25 – 30 minutes, remove the paper from the yogurt and put the yogurt in a small bowl.
- Add the sugar and stir.
- Add the milk with saffron strands, and ground cardamom.
- List ItemStir the yogurt mixture to blend all the ingredients to make a smooth creamy saffron sauce.
- Take six small bowls, pour the yogurt topped with pistachios.
- Serve this as a healthy creamy saffron yogurt breakfast bowl or as a dessert at room temperature.
- You can add any topping on your yogurt like pomegranate seeds, toasted coconut, maple syrup, etc.
TIPS:
- After mixing all ingredients you can keep it in the refrigerator for a day and use the mixture the next day to serve.
- If you need to serve the yogurt immediately, fill a big bowl with ice and put the milk pot in it stirring continuously to cool it down. Then pour the milk in the yogurt and whisk until it gets smooth.
- Taste the mixture before serving, if you feel cardamom is taking over the taste then you can add some more saffron to make a perfect balance.
